Sprout Salad

Ingredients

1 1/2 cups moong beans (sprouted)

3 tablespoons chopped tomatoes

3 tablespoons chopped onions

3 tablespoons chopped cucumber

3 tablespoons chopped coriander

3 tablespoons pomegranate

1 tablespoon roasted peanuts

1/4 cup virgin olive oil

1/2 scoop Origin Nutrition Vegan protein (Unflavoured)

1 1/2 tablespoons lime juice

1/2 teaspoon chilli powder

Salt to taste

Preparation

Mix the sprouts, tomatoes, onions, cucumbers, coriander, pomegranate and peanuts in a bowl. In another bowl, whisk together all the other ingredients. Toss the salad dressing through the rest of the ingredients
and serve.
