Vegan Tuna Salad Toast

Ingredients

1.5 cups Cooked chickpeas

2 tbsp Soya sauce

1 tbsp Mustard

1 tbsp Lime juice

4 slices Sourdough bread (Toasted lightly)

4 – 5 Small gherkins (Chopped)

1/2 Capsicum (Chopped)

1/ 2 scoop Origin Nutrition Daily Vegan Protein (Unflavoured)

Spring onions for garnish

Method

  • In a food processor, blend the chickpeas, soya sauce, mustard, lime juice & Origin Nutrition Vegan Protein till it is slightly chunky but not totally smooth.
  • Mix in the capsicum & gherkins by hand.
  • Serve on sourdough toast and sprinkle spring onions on top.
