
Crispy Sesame Tofu Bowl

Ingredients
For the Tofu
- 400g extra-firm tofu
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons cornstarch
- 1 tablespoon olive oil
For the Sesame Sauce
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 tablespoons maple syrup
- 1 tablespoon chilli garlic sauce
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
For the Bowl
- 2 cups cooked brown rice
- 1 cup shredded carrots
- 1 cup cooked beans
- 1 cup shredded purple cabbage
- 1/4 cup cooked black jeans (rajma)
- 1 teaspoon sesame seeds

Method to get the yummiest bowl
1. Prepare the Tofu
- Press the tofu to remove excess water. Cut it into 1-inch cubes
- In a bowl, mix soy sauce and sesame oil. Add tofu cubes and marinate for at least 15 minutes
- Preheat oven to 400°F (200°C). Toss marinated tofu with cornstarch
- Place tofu on a baking sheet lined with parchment paper. Drizzle with olive oil. Bake for 25-30 minutes, flipping halfway through, until crispy and golden
2. Make the Sesame Sauce
- In a small saucepan, combine soy sauce, rice vinegar, sesame oil, maple syrup, chilli garlic sauce, grated ginger, and minced garlic
- Bring to a simmer over medium heat. Add the cornstarch mixture and stir until the sauce thickens. Remove from heat
3. Assemble the Bowl
- Divide the cooked brown rice among serving bowls
- Arrange crispy tofu, shredded carrots, cabbage, beans and rajma
- Drizzle with sesame sauce
- Sprinkle with chopped green onions and sesame seeds
