
Mango Protein Ice Pops

Ingredients
- 2 ripe mangoes, peeled and diced (keep ’em cold)
- 1 cup yogurt
- A splash of lemon juice
- 1 scoop vanilla protein powder
- 400gm White chocolate
- 2 Tbs coconut oil

Methods
- Blend the diced mangoes, yogurt, vanilla protein powder, and a splash of lemon juice in a blender until smooth and creamy.
- Pour the mango mixture into ice pop molds, leaving a small space at the top for expansion when freezing.
- Insert the popsicle sticks into the center.
- Melt the white chocolate and coconut oil together
- Freeze the pops for at least 4-6 hours, or until completely solid
- Once the pops are frozen, dip each ice pop into the melted white chocolate mixture. You can dip them halfway or coat them entirely
