Mango Protein Ice Pops

Ingredients

  • 2 ripe mangoes, peeled and diced (keep ’em cold)
  • 1 cup yogurt
  • A splash of lemon juice
  • 1 scoop vanilla protein powder
  • 400gm  White chocolate
  • 2 Tbs coconut oil

Methods

  • Blend the diced mangoes, yogurt, vanilla protein powder, and a splash of lemon juice in a blender until smooth and creamy.
  • Pour the mango mixture into ice pop molds, leaving a small space at the top for expansion when freezing.
  • Insert the popsicle sticks into the center.
  • Melt the white chocolate and coconut oil together
  • Freeze the pops for at least 4-6 hours, or until completely solid
  • Once the pops are frozen, dip each ice pop into the melted white chocolate mixture. You can dip them halfway or coat them entirely
