
Vanilla Coconut Barfi

Ingredients

- Fresh coconut (scraped )
- ½ cup sugar (adjust to taste)
- ½ cup milk
- 1 scoop Origin Nutrition vanilla plant protein
- 2 tsp ghee
- A pinch of cardamom powder
- Almonds/Cashews (for garnish)

Methods
- Scrape the coconut carefully, avoiding the brown layer
- Toss the coconut in a kadai for 2 minutes on low heat.
- Add sugar (½ cup for one small coconut) and stir until it melts
- Pour ½ cup milk and mix in one scoop of Origin Nutrition vanilla plant protein until smooth.
- Add cardamom powder and 2 tsp of ghee. Stir continuously until the mixture thickens.
- Flatten the mixture on a greased plate. Let it cool and set for 1 hour.
- Cut into your favorite shapes and garnish with almonds or cashews
