Vanilla Coconut Barfi

Ingredients


  • Fresh coconut (scraped )
  • ½ cup sugar (adjust to taste)
  • ½ cup milk
  • 1 scoop Origin Nutrition vanilla plant protein
  • 2 tsp ghee
  • A pinch of cardamom powder
  • Almonds/Cashews (for garnish)

Methods

  • Scrape the coconut carefully, avoiding the brown layer
  • Toss the coconut in a kadai for 2 minutes on low heat.
  • Add sugar (½ cup for one small coconut) and stir until it melts
  • Pour ½ cup milk and mix in one scoop of Origin Nutrition vanilla plant protein until smooth.
  • Add cardamom powder and 2 tsp of ghee. Stir continuously until the mixture thickens.
  • Flatten the mixture on a greased plate. Let it cool and set for 1 hour.
  • Cut into your favorite shapes and garnish with almonds or cashews
