Vegan Strawberry Payasam

Ingredients

Fruit Compote

  • 100g strawberries, chopped
  • 1 banana, chopped
  • 1 tbsp sugar
  • 1½ cups Boiled Almond Milk (Vegan)
  • 2 tbsp orange juice

Toasted Crisp

  • 2 tsp coconut oil
  • ¼ cup pistachios, roughly chopped
  • ¼ cup almonds, roughly chopped
  • 1 cup puffed rice (Pori)

Strawberry Protein Payasam

  • ¼ cup split yellow moong dal (pasiparupu)
  • 1 cup coconut milk
  • 1 tbsp brown sugar (adjust to taste)
  • 1 scoop Origin Strawberry Protein Powder
  • 1 cup water

Methods

Step 1: Make the Fruit Compote

  • Combine strawberries, bananas, sugar, and orange juice in a small saucepan.
  • Cook over medium heat for 5–7 minutes until fruits soften and the mixture becomes jammy.
  • Cool and set aside.

Step 2: Prepare the Toasted Crisp

  • Heat coconut oil in a pan over medium heat.
  • Add chopped pistachios and almonds. Toast for 2–3 minutes until lightly golden.
  • Add puffed rice, stirring for another 2–3 minutes until crisp.
  • Cool and set aside.

Step 3: Cook the Strawberry Protein Payasam

  • Wash and cook moong dal in 1 cup water until soft and mushy (pressure cook for 2 whistles or boil on the stove).
  • Mash the cooked dal well.
  • In a pan, add mashed dal and brown sugar. Stir until sugar dissolves.
  • Add coconut milk and simmer until slightly thickened.
  • Mix in the origin’s strawberry protein powder until smooth.
  • Cool to room temperature and chill.

Step 4: Assemble the Parfait

  • Layer 1: Add a base of chilled strawberry protein payasam to each glass or bowl.
  • Layer 2: Sprinkle a layer of toasted crisp for crunch.
  • Layer 3: Add a spoonful of fruit compote on top.
  • Repeat the layers as desired. Finish with toasted nuts and fresh strawberry slices.
