Crispy Sesame Tofu Bowl

Ingredients

For the Tofu

  • 400g extra-firm tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1 tablespoon olive oil

For the Sesame Sauce

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons maple syrup
  • 1 tablespoon chilli garlic sauce
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For the Bowl

  • 2 cups cooked brown rice
  • 1 cup shredded carrots
  • 1 cup cooked beans
  • 1 cup shredded purple cabbage
  • 1/4 cup cooked black jeans (rajma)
  • 1 teaspoon sesame seeds

Method to get the yummiest bowl

1. Prepare the Tofu

  • Press the tofu to remove excess water. Cut it into 1-inch cubes
  • In a bowl, mix soy sauce and sesame oil. Add tofu cubes and marinate for at least 15 minutes
  • Preheat oven to 400°F (200°C). Toss marinated tofu with cornstarch
  • Place tofu on a baking sheet lined with parchment paper. Drizzle with olive oil. Bake for 25-30 minutes, flipping halfway through, until crispy and golden

2. Make the Sesame Sauce

  • In a small saucepan, combine soy sauce, rice vinegar, sesame oil, maple syrup, chilli garlic sauce, grated ginger, and minced garlic
  • Bring to a simmer over medium heat. Add the cornstarch mixture and stir until the sauce thickens. Remove from heat

3. Assemble the Bowl

  • Divide the cooked brown rice among serving bowls
  • Arrange crispy tofu, shredded carrots, cabbage, beans and rajma
  • Drizzle with sesame sauce
  • Sprinkle with chopped green onions and sesame seeds
