Why will kids love this tricolour flag food?
This is more than a snack. It is a cooking adventure. We are making Tiranga Kofta drenched in tantalising creamy makhani gravy. The snack is not only pleasing to their eyes but also packed with protein, fibre and calcium.
Recipe: Palak Tiranga Kofta in Makhany Gravy
Ingredients for the Kofta (Makes 4):

1 bunch spinach

1 cup grated paneer

1/2 cup grated carrot

2 tbsp cornflour

2 tbsp roasted gram flour

1/2 tsp red chilli powder

1/4 tsp black pepper powder

1/2 tsp kitchen king masala

1/2 tsp green cardamom powder

Salt to taste

Ingredients for the Makhani Gravy:

1 onion

2-3 tomatoes
-
1 inch ginger
-
8-10 cashews
-
2 green chillies
-
1 tbsp butter
-
4 tbsp fresh cream

1/2 tbsp red chilli powder

1/4 tbsp kitchen king masala

1/4 tbsp garam masala

Salt to taste

Let's Get Cooking!
Makhani Gravy

Melt the butter in a pan. Add chopped onions, tomatoes, cashews, green chillies, and ginger. Cook until the tomatoes are soft. Let it cool down. Then blend it until it is a smooth paste.

Heat the rest of the butter. Add the gravy paste. Stir in the spices until you get rid of the raw smell. Cook for a couple of minutes. Add fresh cream for that classic makhani taste.
Tiranga Kofta
First comes the orange layer. Squeeze water from grated carrot. Mix it with salt, black pepper, roasted gram flour, red chilli powder, kitchen king masala, green cardamom powder, one tsp of Origin Nutrition Unflavoured Protein, and cornflour. Roll this mix into a small ball, and there goes your bright orange layer.
Next comes the white layer. Mix grated paneer with salt, black pepper, roasted gram flour, red chilli powder, kitchen king masala, green cardamom powder, one tsp of Origin Nutrition Unflavoured Protein, and cornflour. Form it into a ball, and you've just got it!
Finally, the green layer. Blanch spinach for a few minutes and wash it in cold water right away. This helps retain its colour. Grind it into a thick paste and mix it with roasted gram flour, salt, black pepper, red chilli powder, kitchen king masala, green cardamom powder, one tsp of Origin Nutrition Unflavoured Protein, and cornflour . This is the last layer.
Time to assemble and fry the balls. Flatten the paneer ball and stuff the carrot ball inside. Seal it up well. Now, wrap the spinach ball around the paneer. Fry these until they are crispy and golden. Let them cool. Cut them in half. You will see the pretty tricolour layers.
Place the fried koftas ten minutes before serving so they stay crisp and don't lose the tiranga colors.
